Everyone's favorite time of year is finally here...
 
Maple syrup!!
 
 
We just recently visited a local maple sugar bush ~ Ferrier's Maplebee Farms ~ in Kearney, Ontario with the family and got to taste first hand how great this seasons batch of maple syrup is.
 
 
Highlight of the day: Asha loved putting her head under the tap and stealing a little sap before it hit the production line. There were smiles all around!
 
 


The kids absolutely loved getting to see and hear all about how the whole process works. From the beginning stages of finding and tapping the maple trees on the property to running the lines from tree to tree and watching the sap actually running through the lines down to the infamous silver buckets often used to collect sap.
 
 
From there those buckets are then dumped into 45 gallon barrels where on a good flowing day the first may overflow into the second 45 gallon barrel. Wow, the kids thought that was a lot of sap and they said "can you imagine how much syrup they will have?" What they don't know is that a great deal of that is water and once boiled down those 45 gallon barrels will produce a great deal less actual Maple Syrup.
 
 
 
 
 
Although that Maple Syrup if watched and cared for properly will be some of the tastiest they have ever had. I will tell you it was...when we got it home after picking up our 1 gallon bottle of syrup from the first batch and had it over pancakes we were all amazed!
 
Mmmmmm....is all we can say!

One thing that can't go without mentioning is we sure take our hats off to the Maple syrup producers all around because it takes a great deal of time and attention to sit and boil and sit and watch and sit and boil the sap down until it gets to just the right temperature which is 218 degrees. At which point you have to get it off right then or your maple syrup goes from being great to being burnt candy. This process can take hours and requires your full attention. So way to go Maple Syrup producers...we are sending a big Thank you out to you because pancakes all over the world just wouldn't be the same without our perfectly made Canadian Maple Syrup!
